ROSMARY CHUNKY SWEET POTATO FRIES
Christmas is nearing us sooner than we think! We want and need quick, easy, tasty and effective side dishes that can be accompanied with our big, balmy Australian Christmas lunches. Anddddddd, who doesn't love good old fashioned fries!?
Sweet potato fries are my absolute faves.... all year round!
These are perfect on their own, or accompanied with a big salad and main. Grab some fresh sprigs of Rosemary from the garden, and throw these in the oven for a super wholesome snack of side!
INGREDIENTS
1 tsp chopped fresh rosemary leaves
1 tbsp Coconut oil
3 medium Sweet potatoes cut into wedges (about 3 medium)
1/2 tsp Himalayan sea salt
METHOD
Preheat oven to 180-200°C.
In a small bowl, combine rosemary and oil; set aside.
Wash potatoes and remove any blemishes. Cut each potato lengthwise into 1/2-inch slices, or desired chunky chip size!
In a large bowl, combine chips, Rosemary, oil and Himalayan salt over the top so they are covered evenly.
Lay flat on a tray, top with and cook in oven for approx 20 minutes, turning once. The trick to perfect fries is starting with the oven at 200, and turning it down after 10 minutes to 180. Remove when they are golden and crispy on the outside
Enjoy immediately!
