4 INGREDIENT STICKY DATE BANANA LOAF
BANANA BREAD WITH A STICKY DATE TWIST.
THIS SIMPLE SWEET & TASTY LOAF IS A GREAT STAPLE! I LOVED CREATING & WHIPPING UP THIS LOAF RECIPE & HAVING A SLICE FOR BREAKFAST OR A HEALTHY NUTRITIOUS TREAT.
4 Ripe Bananas mashed
3 Whole eggs (whisked)
1 cup of soaked pitted Medjool Dates (about 8)
1/2 Cup of Coconut Flour
2 tbls of Coconut oil melted
1 tsp of Baking powder
1/2 tsp Nutmeg
1 tbls Ground Cinnamon Powder
Pinch of Himalayan salt
Pre-heat oven to 180 degrees Celsius.
Add dates to a bowl, cover with hot water. Set aside for 5-10 minutes minimum.
In a bowl mix together dry ingredients. Coconut flour, Baking powder, a pinch of salt and the spices.
Add Bananas to a bowl, smash together. Mash dates and combine with Bananas and add the whisked eggs.
Add all dry ingredients and Coconut oil to wet ingredients. Stir and combine well.
Lightly grease a bread loaf with Coconut oil and pour mixture into pan. Add to the oven and bake for 30-40 minutes, or until springy when touched.
Enjoy warm or toast and top with my fave, peanut butter!
