4 INGREDIENT STICKY DATE BANANA LOAF


 
BANANA BREAD WITH A STICKY DATE TWIST.
THIS SIMPLE SWEET & TASTY LOAF IS A GREAT STAPLE! I LOVED CREATING & WHIPPING UP THIS LOAF RECIPE & HAVING A SLICE FOR BREAKFAST OR A HEALTHY NUTRITIOUS TREAT.

INGREDIENTS

  • 4 Ripe Bananas mashed

  • 3 Whole eggs (whisked)

  • 1 cup of soaked pitted Medjool Dates (about 8)

  • 1/2 Cup of Coconut Flour

  • 2 tbls of Coconut oil melted

  • 1 tsp of Baking powder

  • 1/2 tsp Nutmeg

  • 1 tbls Ground Cinnamon Powder

  • Pinch of Himalayan salt

METHOD

  1. Pre-heat oven to 180 degrees Celsius.

  2. Add dates to a bowl, cover with hot water. Set aside for 5-10 minutes minimum.

  3. In a bowl mix together dry ingredients. Coconut flour, Baking powder, a pinch of salt and the spices.

  4. Add Bananas to a bowl, smash together. Mash dates and combine with Bananas and add the whisked eggs.

  5. Add all dry ingredients and Coconut oil to wet ingredients. Stir and combine well.

  6. Lightly grease a bread loaf with Coconut oil and pour mixture into pan. Add to the oven and bake for 30-40 minutes, or until springy when touched.

  7. Enjoy warm or toast and top with my fave, peanut butter!
