SIMPLE SALTY CARAMEL SLICE (GF)

Keep reading if you want to introduce yourself to a few special ingredients + learn about what I keep on hand to make yummy healthy treats like this Simple salty caramel slice...

I absolutely thrive on making all my food from scratch. I love the idea of homemade + no added processed foods or chemicals added as well as incorporating some special Ayurvedic (yet, very common) spices like cinnamon + vanilla bean to give us numerous benefits in the body, without even knowing! WINNING!

Okay, so here goes. just a simple caramel slice here. nothing to rave about. just the special ingredients + unbelievably addictive taste: you won't completely follow until it hits your lips.

SIMPLE SALTY CARAMEL SLICE Makes: 12 squares |Prep: 10 MINS | Total: 30 MINS (to set in freezer)

INGREDIENTS

BASE

1 cup of dried dates

1/4 cup of almonds 1/2 cup of tiger nut flour

1 tablespoon of coconut oil (melted)

CARAMEL

1 cup of dried dates

½ cup of coconut oil

1 ½ tablespoons of unhulled tahini 1 cup raw cashews (soaked in boiling water for min. 10 minutes)

1/4 cup water

TOP CHOCOLATE LAYER

I used Loving earth Dark and Mylk Chocolate squares melted to coat the top. You can use any vegan or dark chocolate that contains minimal ingredients + all pure

METHOD

BASE

+ Pulse dates, tigernut flour, almonds & coconut oil in a food processor until it resembles fine crumbs and sticks together when pressed.

+ Pour mixture into a slice tin lined (20cm x 20cm) with non-toxic greaseproof paper and press it down to form the base.

+ Place it in the freezer.

CARAMEL

+ Put dates, coconut oil, tahini, cashews and water into a blender and pulse until completely combined and smooth (you may need a little extra water to help blend it but try and keep it to a minimum).

+ Pour caramel mixture on top of the base and return it to the freezer to set.

TOP CHOCOLATE LAYER

+ Add Chocolate squares to a small metal bowl, on top of a saucepan ion boiling water (double boil method) stir until it is combined and resembles chocolate sauce (this should only take a couple of minutes).

+ Spread the chocolate sauce on top of the caramel filling – Make sure the caramel is set before you do this step!

+ Pop it back into the freezer for an 1/2 an hour and then remove it from the tin, slice it up and ENJOY these delightful squares, store in an airtight container in the fridge.
